According to UK law, commercial kitchen canopies and extraction systems (including ducts) must be cleaned at least once a year – this is also a business insurance requirement.

The law says canopies and extraction systems must be cleaned by a professional company.

Why bother cleaning your kitchen canopy and extraction system?

Besides being unhygienic, smelly and attractive to vermin, a dirty kitchen extraction fan or ventilation system can be extremely dangerous.

Accumulation of grease within the extraction system forms a hidden build up of combustible material which can cause fire if exposed to high temperatures or an open flame.

Assessing the risk

Mr Gleam thoroughly tests commercial kitchen ducts and extraction systems for dangerous fat and grease deposits, to ascertain the risks and ensure you are compliant with the law and with the highest standards of cleanliness.

Commercial kitchens must have their ductwork, extraction fans, canopies and ventilation systems cleaned regularly to remain hygienic and to remain compliant with the law and their insurance policy.

Access panels

Mr Gleam will supply and fit unobtrusive access panels to get to hard-to-reach

areas inside extraction systems. All work undertaken is in line with national standards, compliant with fire regulations and is guaranteed.

Method

Mr Gleam specialist cleaning teams will take the following steps to make sure your kitchen canopy and extraction system is thoroughly cleaned and compliant with the law and hygiene standards. We will:

  • Remove and steam clean extraction fans
  • Use a special foaming agent to kill bacteria
  • Clean area with hand scrapers
  • Apply compressed air rotary brushes throughout ducting
  • Use special vacuum to collect debris
  • Finally, use dry ice blasting when necessary
  • . . . and good old-fashioned elbow grease!

Filter cleaning and replacement

As the build up of grease accumulates, canopy filters become less effective, which reduces air circulation and increases the heat of the kitchen.

Dirty filters dramatically affect the performance of your kitchen extraction unit and need to be deep-cleaned on a regular basis.

Mr Gleam will collect dirty filters, deep clean them using special dipping tanks, then return and fit the clean filter ready for use. We also provide and fit new mesh and baffle-type grease filters.

Ongoing support

On completion of the work, we will provide you with a certificate of hygiene. [link to image of certificate] to show insurers and Environmental Health Officers (EHOs).

We will also provide you with report which will outline:

  • the level of grease deposits in the extraction system before cleaning
  • the level of grease deposits in the extraction system after cleaning
  • which systems have been cleaned
  • photographic records of pre-clean and post-clean
  • COSHH data on any chemicals used.

Mr Gleam will also:

  • make recommendations for future cleaning equipment
  • suggest frequency of cleaning based on your needs
  • provide observations on the condition of the ductwork system
  • give you a plan of the system showing access panels and testing locations
